Mezcal is a distilled alcoholic beverage made from the maquey plant (a form of agave) native to Mexico. The word “mezcal” comes from Nahuatl "Melt" and "Ixcalli" which means "oven cooked agave." Today the commonly used word for Agave in Oaxaca is Maguey.


The way mezcal affects one's palate and the way it warms the chest, throat and mouth are quite different than any other alcohol. There is a popular saying in Oaxaca "Para todo mal, mezcal, y para todo bien también" (for everything bad, mezcal, and for everything good, too).
